What Makes Coffee Strong?

The short answer

"Strong" means three different things: caffeine (set mostly by the bean and how much coffee you use), brew strength (how concentrated the cup is, set by your coffee-to-water ratio) and flavour (set mostly by the roast). A dark roast tastes bolder but has about the same caffeine as a light one, and bitterness isn't strength.

Ask ten people what "strong coffee" means and you'll get ten answers. Some mean the caffeine hit. Some mean a dark, heavy flavour. Some mean a cup that isn't watery. They're all different, and they're changed by different things.

01

Three kinds of strong

  • Caffeine strength: how much caffeine is in the cup. It's what wakes you up.
  • Brew strength: how concentrated the cup is. Espresso is far more concentrated than a mug of filter coffee.
  • Flavour strength: how bold, dark and heavy it tastes. Mostly down to the roast.
02

Caffeine: it's the bean and the dose

The type of bean matters most. Robusta has roughly twice the caffeine of arabica. After that, it's simply how much coffee goes in: double the coffee, roughly double the caffeine.

A finer grind and a longer brew pull out a little more, but they're small changes next to the bean and the dose.

03

Brew strength: it's the ratio

How concentrated a cup tastes comes down to how much coffee you use for how much water. Changing the ratio is the most reliable way to make coffee stronger or weaker.

Brew Coffee to water Result
Espresso About 1:2 (22g in, 40g out) Very concentrated
AeroPress, espresso-style About 1:4 Concentrated
Moka pot About 1:10 Strong and rich
AeroPress, everyday cup 1:15 Full and clean
Plunger About 1:16 Full-bodied
04

Flavour: it's the roast

Roasting is where most of the flavour comes from. Darker roasts taste bolder, heavier and more chocolatey. Lighter roasts taste brighter and fruitier.

But roasting barely changes the caffeine. A dark roast tastes stronger, but it isn't meaningfully more caffeinated than a light one.

Myth: "dark roast has more caffeine." It doesn't, in any way you'd notice. If you want more caffeine, look for a higher-caffeine coffee or use more of it.

05

Why bitter doesn't mean strong

Caffeine is only responsible for about 15% of coffee's bitterness. Decaf is nearly as bitter as regular coffee. Most bitterness comes from compounds formed during roasting, and from over-extraction, when the grind is too fine or the coffee brews too long.

So a harsh, ashy cup isn't a strong cup. It's usually a badly roasted or badly brewed one. That's the line we roast to: high caffeine and a bold dark roast, without the ashy bitterness.

06

How to make your coffee stronger

  1. Use more coffee for the same water, or less water for the same coffee.
  2. Pick a more concentrated method, like espresso, a moka pot or the AeroPress.
  3. Get the grind right for your method, so you get full flavour without bitterness. See the grind chart.
  4. Use fresh coffee. Stale coffee tastes flat whatever you do.
  5. Choose a higher-caffeine coffee if it's the caffeine you're after.

The bottom line

Caffeine comes from the bean and the dose. Concentration comes from the ratio. Flavour comes from the roast. Bitterness is a fault, not a sign of strength.

Which Killer coffee

FAQ

Does dark roast coffee have more caffeine?

Not meaningfully. Roasting barely changes the caffeine. Dark roast tastes bolder, but that's flavour, not caffeine.

Is espresso stronger than filter coffee?

It's far more concentrated. But a single shot can have similar or even less caffeine than a big mug of filter coffee, because the mug uses more coffee overall.

Does bitter coffee mean it's strong?

No. Most bitterness comes from roasting and over-extraction, not caffeine.

How do I make coffee stronger without it tasting bitter?

Use more coffee or less water rather than brewing longer or grinding finer. Longer and finer pull out more bitterness.

Which coffee bean has the most caffeine?

Robusta, with roughly twice the caffeine of arabica.

How strong is Killer Coffee?

Industrial Strength and Darkerside have 180mg of caffeine per 100mL, about 3x the average. Blackout has 700mg+.
