Once the cherries are picked, the seeds have to be separated from the fruit and dried, and fermentation is a natural part of that process. It happens to almost every coffee you've ever had. The beans sit and ferment alongside the fruit, soaking up its sweetness and flavour before they're dried. Dark roasting tends to flatten fruity flavours. This one holds on.
