What you'll need

Method

  1. Two filters. Put two paper filters in the cap and rinse them with hot water. The extra filter gives a cleaner cup.
  2. Coffee. Add 15g of coffee to the chamber.
  3. Water. Pour in 225g of water just off the boil and stir gently until all the grounds are wet.
  4. Seal. Push the plunger in 1–2cm to stop it dripping through.
  5. Steep. Wait 2 minutes.
  6. Press. Press slowly and steadily until you hear a hiss, then stop. Forcing the last of the air through adds bitterness.

Method 2: Espresso-style shot

For milk drinks or a stronger hit.

  1. Two filters. Put two rinsed filters in the cap.
  2. Coffee. Add 25g of coffee.
  3. Water. Pour in 90–100g of water just off the boil and stir firmly.
  4. Seal. Push the plunger in 1–2cm.
  5. Steep. Wait 90 seconds.
  6. Press. Press firmly and steadily.

Drink it short, top it up with hot water for an Americano-style cup, or add steamed milk for a latte or flat white.

Dial it in

  • Bitter: press more gently, and stop at the hiss.
  • Weak: use more coffee, or steep 30 seconds longer.
  • Flat or sour: the water was too cool. Use water just off the boil.
  • Leaking through early: seal the plunger straight after stirring.
